Single Malt Scotch has a gravitas in the whisky world. It's so timeless that every sip feels like a taste a history. The earliest record of whisky production in Scotland dates back to 1494 Exchequer Rolls, which reads "Eight bolls of malt to Friar John Cor, by order of the King, wherewith to make aqua vitae (water of life)". Here are the Single Malts we're most excited for at this year's festival!
1. The Glenlivet 18 Year
96 Points, Ultimate Beverage Challenge. The Glenlivet is the single malt that started it all. Scotland's oldest distillery. The 18 year is a special offering reserved for life's great celebrations. Like New England's best spirits Festival! Winner of two Gold medals in the International Wine and Spirit Competition (IWSC) and remains one of the best-value expressions of sherried Speyside. 2. Bowmore 12 Year
Bowmore comes to us from Islay, the island in the southwest corner of Scotland known for such brands as Lagavulin and Bruichladdich. Bowmore 12 year has a place in many hearts as Islay's 'medium-peated' malt. The 12 year bottling is a welcome return to the classic Bowmores of the 1960s and '70s, with the emphasis on tropical fruit and smoke. A deserved runner-up in our Whisky of the Year 2014-15 blind tasting.

3. Jura Seven Wood
"A complex dram that does even more than its name suggests. Matured in a combination of seven different types of oak – first bourbon and then a finish in each of Vosges, Jupilles, Les Bertranges, Allier, Tronçais, and Limousin casks. The result is spicy but run through with chocolate and fruit, thanks to wide range of flavors from the casks." The Whiskey Exchange. This whisky has a tropical sweetness, milk chocolate flavors, and a whisper of smoke.

4. Macallan 15 Year Triple Cask
96 Points, Wine Enthusiast. Built in 1700 from locally quarried sandstone, The Macallan distillery remains one of the most recognizable names in Scotch Whisky. The Macallan’s curiously tiny stills are amongst the smallest on Speyside. Their unique size and shape give the spirit maximum contact with the copper helping to concentrate the spirit and provide the rich, fruity, full-bodied flavors. Find a hint of rose and cinnamon on the nose and intense, rich chocolate, with a hint of orange and raisin on the palate.

5. Dalmore 15 Year
96 Points. Ultimate Beverage Competition
Since its inception in 1839, a long line of whisky pioneers at the helm of The Dalmore distillery have been going above and beyond to create exceptional single malt. The 15 year is matured in Matusalem, Apostoles and Amoroso Sherry casks. The palate offers all those winter spice, orange zest and chocolate notes characteristic of Dalmore. A bottle of this will keep you warm all winter long.

6. Loch Lomond 18 Year
90 Points, Whiskey Advocate. Loch Lomond is the official single malt of The Open -- golf's British Open. Matured in American-oak casks, this 18-year-old whisky from Loch Lomond is full-bodied and rounded with notes of toast, cigar box, apple, and gooseberry. Smoke fans will appreciate the subtle tones of peat, but those typically turned off by smoke will be intrigued by the complexity.

7. Tullibardine 225 Sauternes Cask Finish
Tullibardine is Gaelic for “lookout hill” and refers to a 15th century small medieval chapel located near the distillery. The 225 in the name of this Highland single malt comes from the fact that it was aged for around 12 months in 225-liter casks that previously held Sauternes dessert wine from Chateau Suduiraut. Grapefruit zest, vanilla cream, and allspice tingles with spiced orange candy, marmalade, dried pineapple and milk chocolate. Terrific!
